The 4th of July is such a fun holiday for my family and me. We always have a big party, go to the parade and of course the fireworks!
My favorite 4th of July was when I got to watch my niece be born. It was an amazing experience and I will never forget it! As I left the hospital to drive home, I got to see the fireworks go off over Portland. It was incredible!
So, since my niece is a 4th of July baby we always get together to celebrate all of the birthdays in our family! We go to my Dad's house on the lake and have a bbq and birthday party. We celebrate my Dad's birthday, my niece's Anna and Rachel and my sister's birthday. It is SO much fun. Plus my sister makes the most amazing cake in the world! Seriously to.die.for!
Since my sister is in charge of the cake, I am always asked to bring my FAMOUS potato salad. My ENTIRE family LOVES it and asks me to bring it every year. So I thought I would share the recipe with you!
2 1/2 pounds medium boiling potatoes (white, red, or fingerling)
3 tablespoons cider vinegar, or to taste
5 hard-boiled large eggs
1 cup mayonnaise
2 tablespoons Dijon mustard
1/2 cup chopped sweet onion
3 large celery ribs
1/4 cup chopped dill pickle
Salt and pepper
Chopped parsley or scallions, for garnish

Boil potatoes: In a large saucepan cover potatoes with salted cold water by 1-inch and simmer, covered, until just tender, about 15 to 30 minutes, depending on size of potatoes. In a colander drain potatoes and cool to warm. With a sharp knife peel warm potatoes and cut into 1/3-inch-thick slices. In a bowl, immediately toss potatoes with vinegar.
In a separate bowl, mash yolks, (reserving whites) and stir in mayonnaise, mustard, and onion. Chop whites and celery and gently toss together with dill pickle and potatoes, mayonnaise mixture, and salt and pepper, to taste. Garnish with chopped parsley or scallions. Serve potato salad chilled or at room temperature.
After we have our fill of bbq, potato salad and of course cake, we ALWAYS go to the parade! Addison loves the parade. It's pretty fun and she gets a bucket full of candy!
